Assign Year 1 to your class. Students who play violin, viola, cello, or bass each receive their own instrument-specific curriculum. The class stays together on the same schedule, but homework and recitals are personalized.

Mixed class, real orchestra

Year 1 teaches D, A, G, and the instrument's next string (E for violin and bass, C for viola and cello). The mixed-class concert pieces stay in unison on D and A. The G-string and final-string recitals are per-instrument homework so every student performs on the string they just learned.
